Material
- Rice flour – 1 cup
- Jaggery (chopped or jaggery powder) – 3/4 cup (you can add more or less as per taste)
- Ghee – 2 tablespoons
- Cashews, almonds (chopped) – 2 tbsp
- Cardamom powder – 1/2 tsp
- Water – 1/4 cup (to dissolve the jaggery)
- Roasting rice flour: Heat ghee in a heavy bottom pan on medium flame. Now add rice flour and fry it till it becomes light golden and aromatic. Keep stirring it frequently so that the flour does not burn.
- Making jaggery syrup: Heat water in a separate pan. Add jaggery to it and cook until it dissolves completely. The jaggery syrup should thicken so that it becomes a little sticky.
- Adding jaggery to the flour: Put the roasted rice flour on low flame and add the thick jaggery syrup to it. Mix quickly so that the jaggery dissolves well in the flour and the mixture does not form lumps.
- Adding cardamom and nuts: Add cardamom powder and chopped nuts and mix well.
- Making laddus: Let the mixture cool down a little so that you can take it in your hand and make laddus. When the mixture cools down a little, apply ghee on your hands and make small laddus of desired size.
- Let it cool: Place the prepared laddus on a thali or plate and let them cool completely so that they harden and become firm.
